Have each team set 24 or 25 keepers and when the season rolls over there will only be 5 or 6 rounds for each team to draft.
Trades and draft picks can begin now for players already on rosters. If you want to open up free agency and pick up players for the new season before the draft, please see this as it should help:
Head to League>>Settings>>Edit Roster Requirements>>Click the
edit button down across from total and increase your total size
After you increase the size and then you want to decrease the size, each team must trim their rosters or you can do it for them at League>Settings>Edit Rosters and remove players.

Say I go from 30 players down to 25, how long will owners have to trim their roster to 25 players?
The system will let you know that a team is at or above 25 players when you do that, so it won't let perform the action until each team is at 25 or under.

How do I set my rookie draft? Right now the draft is set for 30 rounds but I'd like to set it for 5 or 6 sometime after the NFL draft.
When can trades and adding free agents begin? This is my first league so I'm really just trying to figure it out.

Is there a way I can up the rosters by 5 or 6 spots for a certain period of time and then reduce back down sometime after we draft?
